Carrot Pupcakes

Who doesn’t love cupcakes? We don’t know anyone either. Now your favourite doggy can enjoy them too. These healthy carrot pupcakes are a delicious treat for those pooches who deserve an extra special snack. Happy baking!

INGREDIENTS

FOR THE PUPCAKES

  • 50g shredded carrots
  • 1 egg
  • 60g unsweetened apple sauce
  • 150g whole wheat/grain flour
  • 20g oatmeal
  • 1 tsp cinnamon
  • Water (if required)

FOR THE ICING

  • 100g soft cheese
  • 50g unsweetened apple sauce

DIRECTIONS

FOR THE PUPCAKES

1. Pre-heat the oven to 180℃ (160℃ for fan-assisted ovens)

2. In a bowl mix together shredded carrots, egg and applesauce.

3. In a separate bowl mix the flour, oatmeal and cinnamon.

4. Gradually add the dry ingredients to the carrots, egg and applesauce mixture

5. Gradually add a few tablespoons of water if your dough is too thick or dry.

6. Spoon your mixture into a greased muffin tin or desired mould.

7. Bake at 180℃ (160℃ for fan-assisted ovens) for 20 minutes, then take out the oven and leave to cool.

FOR THE ICING

1. Mix together the soft cheese and the apple sauce.

2. Spread or pipe onto your pupcakes as desired.
