  • 240 grams oat bran
  • 150 grams rolled oats
  • 130 grams rice flour
  • 1tsp honey
  • 200 grams blueberries
  • 2 eggs

1. Preheat oven to 180℃ (160℃ for fan-assisted ovens)

2. In a large bowl, mash the blueberries.

3. Add honey and eggs and mix together.

4. Add oat bran, rolled oats and rice flour.

5. Knead the dough and roll it out approx 3-5mm thick (if the dough is a bit sticky to handle, add more rice flour).

6. Cut with a cookie cutter.

7. Place on a parchment paper lined baking tray and bake for 30–40 minutes until they are golden brown in colour.

8. Turn the oven off and allow the treats to cool inside the oven completely before removing.

9. Store in an airtight container for up to 1 week.
