Blueberry and Chicken Pies

INGREDIENTS

For the pies

  • 100g whole wheat or whole grain flour
  • 65g ground oatmeal
  • 80g apple sauce
  • 3-4 tbsp water
  • Some butter for greasing

For the filling

  • 50g blueberries
  • 65g cooked chicken

DIRECTIONS

For the pies

  • Combine the flour and oatmeal in a bowl
  • Add apple sauce to the dry ingredients and stir thoroughly
  • Gradually add a few tablespoons of water, ensuring dough doesn’t get too sticky
  • Time to get your hands messy! Bring the dough together so a ball can be easily formed. If the dough is too dry try adding more water.
  • Roll out the pie pastry.
  • Using a cutter or glass cut circles in the pastry.
  • Push these circles into a greased muffin tin.
  • Bake for around 8 minutes on 190°C

For the filling

  • Blend blueberries in a blender
  • Shred the chicken
  • Combine blueberries and chicken in a bowl.
  • Spoon the filling mixture into the baked pies
